It is composed of turmeric, cumin, coriander, pepper, cinnamon, cloves, fenugreek, mustard, ginger and other spices, varied according to local recipes. It brings a warm, fragrant flavor to dishes like curries, stews or marinades. Historically, massale has been influenced by trade between India, Africa and the islands of the Indian Ocean. In use, it is often integrated into dishes at the end of cooking to preserve its aroma.
